INGREDIENTS
- Tinned tuna fish
- Red kidney beans – drained and rinsed
- Red onion – finely chopped
- Garlic – finely chopped
- Fresh basil leaves – finely chopped
- Mayonnaise
I have given you a list of ingredients of the light lunch I prepared for the three of us yesterday. But how much of each is a matter of taste. In our case, I used two 158g tins of Brindisa Ortiz Tuna, one 400g tin of red kidney beans and one large red onion. I used four cloves of garlic because we all like garlic and a handful of basil leaves. I used just one dessert spoon of mayonnaise because the oil from the tuna helps to bind the mixture.
It makes a handy quick light lunch, along with a fresh green salad and some crusty bread. Leftovers keep very well in the refrigerator.
I’ll try this on Ben. He is not keen on fish generally….but if I disguise it with other things 🙂
