Weeks ago I followed a recipe that left me with four or five egg whites. The most delicious solution to having excess egg whites is of course meringues. They lasted for weeks and we tried lots of different toppings. These were our raspberry, chopped pistachio and honey meringues - an easy quick and perfect pudding!
